Our name

Suau means “soft” in Catalan.

As fast-moving technology and busy schedules increasingly demand our attention, we believe in bringing softness and care into our way of doing things. This conviction is present in how we source and handle ingredients, how we treat our team and collaborators, and how we create with our clients.

Our approach

Following the methods of design thinking, we co-create menus and event concepts with the precision of a creative studio while providing the warmth of home-cooked meals. We are equally comfortable serving intimate gatherings and large-format events. Suau Studio is female-founded and independent. We bring together culinary craft, gastronomic science, and operational expertise to deliver something the industry rarely offers: quality that holds at any scale.

Where we come from

Our founders Xao and Maria have moved through two of the most demanding — and most rigid — worlds in food: the intensity of the Michelin kitchen and the scientific rigor of the food industry. Both are environments that combine strict discipline with innovative, creative ideas. Xao and Maria have long wanted to invite guests to their own table, using their comprehensive backgrounds to build something more intimate, more suau. This project brings to life their unique vision for cuisine and hospitality.

Culinary Concept & Creative Direction

Xao grew up in a small Catalan town as the only Chinese-adopted child around, learning to cook dishes from her country of origin to form a more tangible connection. That early experience of food as identity never left her. Trained at the Basque Culinary Center, she went on to work in Michelin-recognized kitchens across Spain and Portugal, including stints at Pepe Vieira and Gastro Elemento, before founding her own gastronomic project in the Pyrenees and leading kitchen teams at high-volume venues. At Suau, Xao leads the culinary concept and creative direction. Her cooking is rooted in seasonal produce, technique, and a deep respect for the table as a place of encounter.

Operations & Strategy

Maria grew up between Spain and the United States, shaped by the adaptability of living across cultures and languages. With Korean heritage on her mother's side and Spanish on her father's, she harnesses the rich culinary cultures of her family in her work. She holds a Master's in Gastronomic Sciences from the Basque Culinary Center and a degree in Human Nutrition from the University of Navarra. Maria has built her career at the intersection of food, technology, and science, with experience spanning food industry R&D, academic research, and AI development, applying an interdisciplinary approach to advance innovation across food systems. At Suau, Maria leads operations and brings the analytical precision of her scientific background to event planning and workflow design.
