Xao grew up in a small Catalan town as the only Chinese-adopted child around, learning to cook dishes from her country of origin to form a more tangible connection. That early experience of food as identity never left her. Trained at the Basque Culinary Center, she went on to work in Michelin-recognized kitchens across Spain and Portugal, including stints at Pepe Vieira and Gastro Elemento, before founding her own gastronomic project in the Pyrenees and leading kitchen teams at high-volume venues. At Suau, Xao leads the culinary concept and creative direction. Her cooking is rooted in seasonal produce, technique, and a deep respect for the table as a place of encounter.
